Newbury News - Alumni Chef Series

Fall 2008

Newbury's esteemed Roger A. Saunders School of Hotel & Restaurant Management not only provides career relevant education for future chefs - it also has built an impressive group of alumni celebrity chefs who come back to the Weltman Dining Room at Newbury each semester.

Through the Alumni Chef Series, created by associate professor and culinary chef Madonna Berry in 2006, Weltman Dining Room guests are treated to a delectable event. The alumni chef works with Chef Berry and her students to prepare a special, off-the-menu, dining event. The Alumni Chef Series has been well received by guests and by the students who work side by side in an innovative real world classroom with a seasoned chef whose own culinary career began in the same kitchen.

The following alumni chefs are confirmed to date in the Weltman Dining Room on the following dates.

Monday October 27, 2008
Alumni Chef Matthew Tropeano.
Executive Chef, La Grenouille

Matthew Tropeano is executive chef at the renowned restaurant, La Grenouille, in Manhattan. A Massachusetts native, he grew up cooking at home and in his family's restaurant before enrolling in Newbury's culinary program. He was a sous chef at the Bay Tower Room in Boston, a saucier at Nana in Texas, and started as a line cook at La Grenouille in 2003. He was featured on the Martha Stewart show when the historic restaurant re-opened. Matthew has dedicated himself to balancing the beloved classic dishes of La Grenouille with inspiring seasonal dishes of the moment.

Wednesday October 29, 2008
Alumni Chef German Lam.
Glam Foods

German Lam is a "personal trainer - for the kitchen". He is a former restaurant chef and now founder and owner of Glam Foods in which he brings his executive chef's expertise into an unforgettable and nutritious home cooking lesson experience.

A 1986 graduate of Newbury College, Lam was born in Santiago, Chile and raised in Boston. He has worked at the Harvard Club of Boston, Chatham Bars Inn, and the Charles Hotel. German currently conducts cooking demonstrations at Williams-Sonoma in Burlington and Whole Foods in Newton, Massachusetts, and he teaches culinary courses at Stonewall Kitchen in York, Maine.
