The Roger A. Saunders School of Hotel & Restaurant Management at Newbury College features an on-campus, open-to-the-public restaurant, run by students working under our chef instructors to prepare and serve meals. While patrons enjoy a unique fine dining experience in the beautifully appointed Lois and David Weltman Dining Room, students have the opportunity to apply their culinary and hospitality training, and gain relevant experience in an active restaurant environment. It is an extraordinary opportunity for culinary students to spend time at each of the various kitchen stations, and for hospitality students to acquire experience in both front- and back-of-the-house functions.
The Weltman Dining Room is open to the public during specific times over the academic year that coincide with dining room service and kitchen production classes, specializing in International Cuisine, Bistro, Classical and Advanced Contemporary Cuisine. On selected evenings, the Alumni Guest Chef Program may feature guest alumni chefs that will create custom menus for the dining room.
Several times a year, the Dining Room opens its doors for our famed Grand Buffet, a collaborative feast from the culinary arts students and chef instructors featuring an elaborate variety of hot and cold appetizers, entrees, desserts from all the current culinary classes.
